這是硬派廚房的醬油系調味大作--辣椒蔭瓜豉油和尚頭。

我們採用壺底油、蔭瓜、豆豉油,三種醬油來進行調味,可以說是將外省菜與本省菜的技術合成

蔭瓜的風味,讓我們想起小時候吃稀飯配蔭瓜的童年滋味。鹹香、豆味,讓牛臀肉更增香不少

壺底油充滿甘味的滋味,讓「醬油」變得更為立體。

豆豉油則是充滿厚度、味道更沉、風味濃郁,我們將這三個醬油透過一定比例混和

並使用牛油來補充讓和尚頭(牛臀肉)更為順口、更有牛肉香氣。
